These little muffins have become a favorite snack in our house. They are so much better than the store bought version because they are always moist and you know exactly what ingredients go into them.

They are also simple enough for kids to help with, which makes weekend baking even more fun. You will love how quickly these come together when you need a sweet treat for a school lunch or a quick snack.

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup mini semi sweet chocolate chips

Instructions

    Preheat your oven to 375 degrees Fahrenheit and grease a mini muffin pan with nonstick cooking spray.

    In a large bowl, whisk together the flour, sugar, baking powder, and salt.

    In a separate smaller bowl, stir together the milk, vegetable oil, egg, and vanilla extract until smooth.

    Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, as that keeps them light.

    Gently fold in the mini chocolate chips.

    Spoon the batter into the prepared mini muffin pan, filling each cup about three quarters of the way full.
