This bright green dressing is a favorite because it is so fresh and flavorful. It works beautifully on salads or as a dip for crunchy raw vegetables.

My top tip is to use the freshest herbs you can find at the market. The quality of your parsley and basil really makes a difference in the final taste.

Ingredients

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup fresh parsley, packed
  • 1/4 cup fresh basil, packed
  • 1 tablespoon fresh chives
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon white wine vinegar
  • 1 clove garlic, peeled
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

    Place the mayonnaise, sour cream, parsley, basil, chives, lemon juice, vinegar, garlic, salt, and pepper into a food processor or blender.

    Pulse the mixture until the herbs are finely chopped and the dressing is smooth and creamy.

    Taste the dressing and add a pinch more salt or pepper if you think it needs it.

    Pour the dressing into a jar or container and keep it in the fridge until you are ready to serve.

Store this dressing in a glass jar in the refrigerator for up to five days. Give it a quick stir before serving if it has separated slightly. It is wonderful on a cobb salad or served with sliced cucumbers and carrots.
