There is nothing quite like a fresh, homemade dressing to bring your salad to life. This Italian vinaigrette is a staple in my kitchen because it uses simple pantry items and takes only a few minutes to whisk together.

My best tip is to let the dressing sit for at least thirty minutes before serving. This gives the dried herbs enough time to rehydrate and blend their flavors into the oil and vinegar perfectly.

Ingredients

  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon water
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried parsley
  • A pinch of sugar or honey

Instructions

    Gather all of your ingredients and find a clean glass jar with a tight fitting lid.

    Add the olive oil, red wine vinegar, water, oregano, garlic powder, onion powder, salt, pepper, parsley, and the small pinch of sugar to the jar.

    Secure the lid tightly and shake the jar vigorously until the dressing is well combined and slightly emulsified.

    Taste the dressing and adjust the salt or pepper if you feel it needs a little more flavor.

    Serve immediately or place the jar in the refrigerator to let the flavors meld before you dress your favorite salad greens.

Store this dressing in a sealed jar in the refrigerator for up to two weeks. The oil might solidify when cold, so just let it sit on the counter for ten minutes and give it a good shake before you use it.
