Homemade Lemon Poppy Seed Dressing
A bright and tangy dressing that brings any salad to life with its fresh lemon flavor and lovely crunch.
dailyrecipesbook.comThere is nothing quite like a homemade dressing to make your greens taste extra special. This recipe is a favorite in my kitchen because it is light and refreshing without being heavy or overly complicated.
Since it does not rely on mayonnaise, you get a clean taste that lets your fresh garden vegetables shine. I love keeping a jar of this in the fridge for quick weekday lunches. Just remember to give it a good shake before you pour it since the oil and lemon juice tend to separate while sitting.
Ingredients
- 1/3 cup olive oil
- 1/4 cup fresh lemon juice
- 1 tablespoon honey or maple syrup
- 1 tablespoon poppy seeds
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1 pinch black pepper
Instructions
- 1
Place the olive oil, lemon juice, honey, Dijon mustard, salt, and pepper into a small jar or a mixing bowl.
- 2
If using a jar, screw the lid on tightly and shake it vigorously until the dressing is well combined.
- 3
If using a bowl, whisk the ingredients together until the mixture is smooth and emulsified.
- 4
Stir in the poppy seeds last.
- 5
Taste and adjust the salt or sweetness if you prefer a different balance.
- 6
Serve immediately or store in the refrigerator until you are ready to use.
๐ก Tips
Store this dressing in a sealed glass jar in the refrigerator for up to one week. Since it contains fresh lemon juice, the flavor is best when used within the first few days. Always shake the jar well before serving because the poppy seeds and oil will settle at the bottom.
