There is something special about biting into a slice of authentic Sicilian pizza. It is famously thick and fluffy, almost like a piece of focaccia, which makes it the perfect base for a rich tomato sauce and a little bit of cheese.

My favorite thing about this recipe is the crispy breadcrumb topping. It adds a wonderful crunch that contrasts perfectly with the soft, chewy dough. Make sure to let your dough rise fully so you get that signature airy texture inside.

Ingredients

  • 4 cups all purpose flour
  • 1 1/2 cups warm water
  • 2 teaspoons instant yeast
  • 1 teaspoon sugar
  • 2 teaspoons salt
  • 3 tablespoons olive oil
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup breadcrumbs
  • 1 teaspoon dried oregano
  • 4 anchovy fillets, optional

Instructions

  1. 1

Combine the warm water, yeast, and sugar in a large bowl and let it sit for five minutes until it gets foamy.

  2. 2

Add the flour, salt, and two tablespoons of olive oil to the yeast mixture. Mix until a dough forms.

  3. 3

Knead the dough on a floured surface for about ten minutes until it is smooth and elastic.

  4. 4

Place the dough in a greased bowl, cover it, and let it rise in a warm spot for one hour or until it doubles in size.

  5. 5

Grease a rectangular baking pan with the remaining olive oil and spread the dough into the corners.

  6. 6

Cover the dough and let it rest for another thirty minutes to puff up.

  7. 7

Preheat your oven to 425 degrees Fahrenheit.

  8. 8

Spread the tomato sauce over the dough, then sprinkle on the cheese, oregano, and breadcrumbs. Add the anchovies if you are using them.

  9. 9

Bake for twenty to twenty five minutes until the crust is golden brown and the cheese is bubbly.

  10. 10

Let the pizza cool for five minutes in the pan before slicing into squares.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can reheat slices in a hot oven or toaster oven to keep the crust crispy. If you prefer a less salty flavor, feel free to skip the anchovies.
