When the garden starts overflowing with zucchini, this skillet dinner becomes my go to meal. It is light, healthy, and comes together in just a few minutes after a busy day.

You can easily swap the chicken for chickpeas if you want to keep this vegetarian. Just be sure to cook the zucchini quickly so it stays crisp and does not get mushy.

Ingredients

  • 2 large zucchinis, sliced into half moons
  • 1 pound chicken breast, cut into bite sized pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 tablespoon lemon juice
  • 1/4 cup chopped fresh parsley

Instructions

    Heat the olive oil in a large skillet over medium high heat.

    Add the chicken pieces and cook until browned and cooked through, about 5 to 7 minutes.

    Remove the chicken from the pan and set it aside on a plate.

    Add the sliced zucchini to the same skillet and sauté for 3 to 4 minutes until it starts to soften.

    Stir in the minced garlic and dried oregano, cooking for another minute until fragrant.

    Return the chicken to the skillet and toss everything together.

    Drizzle with lemon juice and season with salt and pepper.

    Top with fresh parsley and serve immediately.

💡 Tips

This dish is wonderful served over a bed of fluffy quinoa or brown rice. If you have leftovers, keep them in an airtight container in the fridge for up to two days and reheat them gently on the stove.
