My biggest tip is to really massage the kale with a little olive oil before adding the other ingredients. This simple step makes the leaves much softer and easier to chew, which makes the whole salad taste better.

Ingredients

  • 1 bunch curly kale, stems removed and leaves chopped
  • 1 cup broccoli slaw
  • 1/2 cup dried cranberries
  • 1/2 cup pecans, toasted
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

    Remove the tough stems from the kale and chop the leaves into bite sized pieces.

    Place the kale in a large bowl and drizzle with a little olive oil. Use your hands to massage the kale for two minutes until it becomes dark green and soft.
