Matcha Strawberry Tiramisu

Ingredients
- 16 ounces mascarpone cheese, room temperature
- 1 cup heavy whipping cream
- 1/2 cup granulated sugar
- 2 tablespoons ceremonial grade matcha powder, plus extra for dusting
- 1 teaspoon pure vanilla extract
- 1 cup hot water
- 1 tablespoon granulated sugar for the soak
- 1 tablespoon matcha powder for the soak
- 24 to 30 Savoiardi ladyfingers
- 2 cups fresh strawberries, thinly sliced
- 1/2 cup strawberry sauce

In a large bowl, mix the room temperature mascarpone and sugar until smooth. Gently stir in the matcha powder and vanilla extract.

Slowly whisk in the heavy whipping cream until the mixture thickens and reaches medium peaks.

In a shallow bowl, whisk together the hot water, sugar, and matcha powder for the soak until dissolved and slightly frothy.

Quickly dip each ladyfinger into the matcha soak for just one or two seconds so they absorb flavor without becoming mushy.

Arrange a single layer of dipped ladyfingers in the bottom of your serving dish.

Add a layer of sliced strawberries over the cookies, then spread a generous layer of the matcha mascarpone cream on top. Drizzle with a little strawberry sauce.

Store your leftovers in the refrigerator covered tightly for up to three days. Make sure to use hard, dry Savoiardi ladyfingers rather than the soft sponge kind to keep the texture just right. If you want a really clean look, wait to dust the top with matcha until the very last second before bringing it to the table.
