No Mayo Potato Salad
A fresh and vibrant potato salad that skips the heavy dressing in favor of bright herbs and olive oil.
dailyrecipesbook.comThis potato salad is my favorite way to serve something satisfying without needing any mayonnaise or dairy. It relies on the natural creaminess of tender potatoes paired with the sweetness of roasted corn to create a dish that feels light yet filling.
My top tip for this salad is to dress the potatoes while they are still slightly warm. This allows them to soak up all that lovely vinaigrette so every bite is packed with flavor instead of just sitting on the surface.
Ingredients
- 2 pounds baby potatoes, halved
- 1 cup roasted corn kernels
- 1/4 cup extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup red onion, finely diced
- Salt and black pepper to taste
Instructions
- 1
Place the potatoes in a large pot and cover them with cold salted water.
- 2
Bring the water to a boil and cook the potatoes until they are fork tender, which usually takes about 15 minutes.
- 3
Drain the potatoes well and let them steam dry for a minute before placing them in a large mixing bowl.
- 4
In a small jar or bowl, whisk together the olive oil, vinegar, Dijon mustard, and minced garlic to make the dressing.
- 5
Pour the dressing over the warm potatoes and gently toss to coat them well.
- 6
Fold in the roasted corn, chopped parsley, and red onion.
- 7
Season the salad with salt and pepper to taste, then let it sit for at least 20 minutes before serving so the flavors can mingle.
๐ก Tips
Store any leftovers in an airtight container in the fridge for up to three days. This salad actually tastes even better the next day after the flavors have spent more time in the fridge. Serve it cold or at room temperature alongside grilled chicken or fish.
