Chicken drumsticks are such an underrated cut of meat. They are budget friendly, incredibly juicy, and perfect for when you want a fun, hands on meal that feels a bit special without much extra effort.

This recipe gives your classic chicken legs a delicious Thai inspired makeover. By slashing the meat before marinating, the savory flavors soak deep into every bite, and the creamy peanut sauce is just right for dunking.

Ingredients

  • 10 large chicken drumsticks, about 1.5kg total
  • 1 cup coconut milk, divided
  • 3 tablespoons Thai red curry paste, divided
  • 1 tablespoon curry powder
  • 2 tablespoons neutral oil
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1/2 cup natural peanut butter
  • 1/2 cup milk or chicken stock
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dark soy sauce

Instructions

    Use a sharp knife to make three shallow slashes into the meaty side of each drumstick to help the marinade absorb.

    In a large bowl, whisk together 1/2 cup of the coconut milk, 2 tablespoons of the red curry paste, the curry powder, oil, salt, and sugar.

    Add the chicken to the bowl and toss well, making sure to rub the marinade into the slashes. If you have time, let it marinate for 3 hours or overnight in the fridge.

    Preheat your oven to 200C. Place the drumsticks on a wire rack set over a baking tray and bake for 35 to 40 minutes until golden and cooked through.

    While the chicken bakes, make the sauce by combining the remaining coconut milk, 1 tablespoon of curry paste, peanut butter, milk, vinegar, and soy sauce in a small saucepan over medium heat.

    Simmer the sauce for a few minutes while whisking until it is smooth and warmed through. Serve the chicken hot with the peanut sauce on the side for dipping.

💡 Tips

Store any leftover chicken and sauce in separate airtight containers in the fridge for up to 3 days. To reheat, warm the chicken in the oven or air fryer until crispy again, and gently heat the sauce on the stove with a splash of water if it has thickened too much.
