If you have never tried bitter melon, this is the perfect way to start. By blanching the slices quickly in salted water, you keep the lovely crunch while softening the intensity of the flavor.

The creamy tofu dressing adds a wonderful richness that coats the vegetables perfectly. It is a light and nutritious side dish that pairs beautifully with steamed rice and grilled fish.

Ingredients

  • 1 medium bitter melon
  • 1/2 teaspoon salt for blanching
  • 1/2 block firm tofu, about 7 ounces
  • 1 tablespoon white miso paste
  • 1 tablespoon toasted sesame seeds, ground
  • 1 teaspoon sugar
  • 1 teaspoon soy sauce

Instructions

    Wrap the tofu in paper towels and place a heavy object on top for 15 minutes to press out excess water.

    Cut the bitter melon in half lengthwise and use a spoon to scrape out the seeds and white pith.

    Slice the melon into thin half moons.

    Bring a small pot of water to a boil with the half teaspoon of salt and blanch the bitter melon for 1 minute, then drain and rinse with cold water to stop the cooking.

    In a mixing bowl, crumble the pressed tofu with a fork or whisk until it becomes smooth and creamy.

    Stir the miso, ground sesame seeds, sugar, and soy sauce into the tofu until well combined.

    Add the drained bitter melon to the bowl and toss gently until every piece is coated in the dressing.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to two days. If the salad releases some liquid, just give it a quick stir before serving it chilled.
