This salad is a personal favorite because it never gets soggy or wilts like leafy greens. It is the perfect side dish for a summer barbecue or a quick lunch when you want something satisfying but light.

My top tip is to let the salad sit in the fridge for about thirty minutes before you serve it. This allows the lemon juice and olive oil to really soak into the chickpeas, making every bite taste even better.

Ingredients

  • 2 cans chickpeas, rinsed and drained
  • 2 large cucumbers, diced
  • 1/2 red onion, finely diced
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup crumbled feta cheese
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
