This salad is one of my absolute favorites because it stays crunchy even after sitting in the fridge for a little while. The combination of fresh broccoli, chewy dried cranberries, and toasted seeds makes every bite interesting and flavorful.

I love serving this at potlucks because it is always the first bowl to disappear. To make it even easier, you can chop your broccoli into very small florets so they soak up more of that tangy lemon dressing.

Ingredients

  • 4 cups fresh broccoli florets, chopped small
  • 1/2 cup dried cranberries
  • 1/4 cup sunflower seeds
  • 1/4 cup slivered almonds
  • 1/2 cup crumbled feta cheese
  • 1/3 cup mayonnaise
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon poppy seeds
  • 1 teaspoon honey
  • Salt and black pepper to taste

Instructions

    Place the chopped broccoli, cranberries, sunflower seeds, almonds, and feta cheese into a large mixing bowl.

    In a separate small bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, lemon zest, poppy seeds, and honey until smooth.

    Pour the dressing over the broccoli mixture.

    Toss everything together until the vegetables are well coated.

    Season with salt and pepper to your liking and serve immediately or let it chill in the fridge for an hour to let the flavors blend.

Store any leftovers in an airtight container in the refrigerator for up to two days. If you prefer a lighter dressing, you can swap the mayonnaise for an equal amount of Greek yogurt. This salad tastes best when the broccoli is chopped into bite sized pieces.
