This roasted beet salad is a staple in my kitchen whenever I want something that feels fancy but is actually quite simple to make. The earthiness of the beets plays perfectly against the tangy goat cheese, and the citrus dressing ties it all together beautifully.

I find that roasting the beets whole helps keep them juicy and makes them much easier to peel once they cool down. It is a wonderful dish to bring to a dinner party or just to enjoy as a light lunch during the week.

Ingredients

  • 4 medium beets, scrubbed clean
  • 4 ounces fresh goat cheese, crumbled
  • 1/4 cup walnuts, toasted and chopped
  • 4 cups mixed salad greens
  • 2 tablespoons olive oil
  • 1 tablespoon orange juice
  • 1 teaspoon honey
  • 1 teaspoon balsamic vinegar
  • Salt and black pepper to taste

    Preheat your oven to 400 degrees Fahrenheit.

    Wrap each beet in aluminum foil and place them on a baking sheet. Roast for about 45 to 60 minutes or until they are tender when pierced with a fork.
