This salad has become a favorite in my home because it perfectly balances sweet and savory flavors. It is bright and cheerful on the table, making it a wonderful addition to your holiday spread or any autumn dinner party.

You can roast the squash ahead of time to save space in the oven on the big day. Just let it cool completely before adding it to the greens so the leaves stay crisp and fresh.

Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon maple syrup
  • 1/2 teaspoon cinnamon
  • 5 ounces mixed salad greens
  • 1/2 cup candied walnuts or pecans
  • 1/3 cup dried cranberries
  • 1/3 cup crumbled feta cheese
  • 3 tablespoons olive oil for the dressing
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

    Preheat your oven to 400 degrees Fahrenheit.

    Toss the cubed butternut squash with olive oil, maple syrup, cinnamon, and a pinch of salt on a large baking sheet.

Store any leftover dressing in a separate jar in the fridge for up to one week. If you have leftover salad, keep the greens and dressing separate so the leaves do not get wilted.
