There is something so satisfying about the combination of sweet, tender roasted potatoes and a punchy mustard dressing. It makes for a wonderful side dish during the cooler months or a hearty base for a lunch salad when topped with some greens.

My biggest tip is to make sure your sweet potato cubes are all roughly the same size. This ensures they cook evenly in the oven and get those lovely caramelized edges that make this dish so special.

Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup pecans, toasted
  • 1/4 cup goat cheese or feta, crumbled
  • 3 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon maple syrup
  • 1 tablespoon apple cider vinegar
