Simple Fresh Cherry Tomato Salad
This bright and juicy cherry tomato salad is the perfect way to highlight fresh produce with just a few pantry staples.
dailyrecipesbook.comThere is something truly special about a bowl of sun ripened cherry tomatoes. This salad is one of my favorite side dishes because it comes together in minutes and tastes like pure summer sunshine.
My top tip is to use the best quality extra virgin olive oil you can find. Since there are so few ingredients, the flavor of the oil really shines through in every single bite.
Ingredients
- 2 pints cherry tomatoes, halved
- 1/2 cup fresh basil leaves, torn
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Instructions
- 1
Place the halved cherry tomatoes into a large mixing bowl.
- 2
Add the torn basil leaves directly on top of the tomatoes.
- 3
Drizzle the olive oil and balsamic vinegar over the mixture.
- 4
Sprinkle with the salt and black pepper.
- 5
Toss everything together gently until the tomatoes are well coated with the dressing.
- 6
Serve immediately at room temperature for the best flavor.
๐ก Tips
If you have time, let the salad sit for ten minutes before serving so the tomatoes can marinate. You can store leftovers in an airtight container in the fridge for up to one day, but it is best enjoyed fresh.
