There is truly nothing like making your own salad dressing at home. Once you get the hang of this simple Greek recipe, you will find it hard to go back to the bottled versions from the store because the flavor is so much fresher and brighter.

I love this dressing because it comes together in just a few minutes with basic pantry staples. My top tip is to use the best quality olive oil you can find, as it really makes a difference in the final taste.

Ingredients

  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon dried oregano
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Dijon mustard

Instructions

    Grab a small bowl or a glass jar with a tight lid.

    Add all of the ingredients into the container.

    Whisk the mixture vigorously with a fork or shake the jar well until the oil and vinegar are combined and the dressing looks creamy.

    Taste it and add a little more salt or pepper if you prefer, then serve it over your favorite salad greens.

Store any leftovers in a sealed glass jar in the refrigerator for up to one week. The olive oil may solidify when cold, so just let the jar sit on the counter for ten minutes before you shake it up and serve.
