Easy Japanese Bean Sprout Salad
This crunchy and savory sesame salad is a simple side dish that comes together in just a few minutes.

The main trick is in how you blanch them. You only want to cook the sprouts for about a minute so they stay nice and crunchy. Be sure to squeeze out all the extra water after cooling them so the dressing does not get watered down.
Ingredients
- 12 ounces fresh bean sprouts
- 2 tablespoons toasted sesame oil
- 1 tablespoon soy sauce
- 1 teaspoon toasted sesame seeds
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1 clove garlic, minced
- 1 green onion, thinly sliced
Instructions

Rinse the bean sprouts under cold water and remove any hulls or bits that look discolored.

Bring a large pot of water to a boil and add a pinch of salt to the water.

Drop the sprouts into the boiling water and cook them for exactly one minute.

Drain the sprouts immediately and rinse them under very cold water to stop them from cooking further.

Once the sprouts are cool to the touch, use your hands to gently squeeze out as much excess moisture as you can.

In a mixing bowl, whisk together the sesame oil, soy sauce, sesame seeds, salt, sugar, and minced garlic.

Add the sprouts and green onions to the bowl and toss everything together until the sprouts are well coated.

You can store this salad in an airtight container in the fridge for up to two days. It actually tastes even better after sitting for an hour because the flavors have time to soak in. Try adding a little chili oil if you want a spicy kick.
