Everything roasts together beautifully so the chicken stays tender while the vegetables get perfectly caramelized.

My top tip for this recipe is to cut your vegetables into similar sizes so they cook at the same rate. If you have some extra lemon slices, tuck them under the chicken thighs for an even brighter, fresher flavor.

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 pound broccoli florets
  • 1 large zucchini, sliced into half moons
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 1 lemon, sliced into rounds
