There is nothing quite like the smell of a roasting chicken filling the house on a lazy Sunday. This slow cooker version is a total lifesaver because it stays incredibly moist without you having to watch the oven all day long.

The secret to getting that perfect flavor is a simple rub of paprika and herbs. Make sure to pat the chicken completely dry before adding the spices so they really stick to the skin and soak in.

Ingredients

  • 1 whole chicken, about 4 to 5 pounds
  • 2 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons cornstarch
  • 1/4 cup cold water

    Remove any giblets from the chicken cavity and pat the skin dry with paper towels.

    In a small bowl, mix the olive oil, paprika, thyme, garlic powder, salt, and pepper into a paste.

    Rub the spice mixture all over the chicken, making sure to cover the legs and wings.

    Place the chicken in the slow cooker with the breast side facing up.

    Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the internal temperature reaches 165 degrees.

    Strain the liquids from the bottom of the pot into a small saucepan and bring them to a simmer on the stove.

    Whisk the cornstarch and cold water together in a small cup, then pour it into the simmering juices.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to three days. This chicken is also wonderful when shredded for sandwiches or added to a fresh garden salad the next day.
