Smoky Grilled Caesar Salad
This twist on a classic salad adds a wonderful smoky char to crisp romaine hearts.
dailyrecipesbook.comThere is something so special about taking fresh romaine hearts to the grill. The heat slightly wilts the outer leaves while keeping the center crunchy, and that little bit of char adds a depth of flavor you just cannot get from a raw salad. It is a fantastic way to change up your dinner routine.
My biggest tip for this one is to keep the grill very hot and do not leave the lettuce on for too long. You want the leaves to pick up those grill marks without turning into mush. Serve this alongside some grilled chicken or steak for a complete meal that feels fancy but is actually quite simple to pull together.
Ingredients
- 2 large heads romaine lettuce, halved lengthwise
- 2 tablespoons olive oil
- 1/2 cup Caesar dressing
- 1/4 cup shaved Parmesan cheese
- 1 tablespoon chopped fresh chives
- 1 cup garlic crostini, torn into bite sized pieces
- Salt and black pepper to taste
Instructions
- 1
Preheat your outdoor grill or a stovetop grill pan to medium high heat.
- 2
Brush the cut sides of the romaine hearts lightly with olive oil and season them with a pinch of salt and pepper.
- 3
Place the romaine hearts cut side down onto the hot grill grates.
- 4
Cook for about 2 to 3 minutes until the leaves are lightly charred but still crisp.
- 5
Remove the lettuce from the grill and place them cut side up on a serving platter.
- 6
Drizzle the Caesar dressing generously over the warm grilled leaves.
- 7
Top the salad with the shaved Parmesan, fresh chives, and garlic crostini before serving immediately.
๐ก Tips
Store your leftover dressing in a glass jar in the fridge for up to one week. If you have any extra grilled lettuce, chop it up and toss it into a wrap for a quick lunch the next day.
