If you love elote, this salad is going to be your new favorite go to. It packs all those smoky and creamy street corn flavors into a big bowl of greens with plenty of texture from black beans, roasted pepitas, and crunchy tortilla strips.

I love making this when corn is at its peak in the summer, but it works just as well with frozen or canned corn throughout the year. It is a fantastic side dish for taco night or a hearty enough lunch all on its own.

Ingredients

  • 6 cups chopped romaine lettuce
  • 2 cups corn kernels, fresh or canned
  • 1 can black beans, drained and rinsed
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup roasted pepitas
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup green onions, sliced
  • 1/2 cup tortilla strips
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 fresh lime, juiced
  • 1 teaspoon chili powder
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

    Heat a skillet over medium high heat and cook the corn until it is charred and slightly browned, then set it aside to cool.

    In a small bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, and minced garlic to make the dressing.

    In a large salad bowl, combine the chopped romaine, charred corn, black beans, cilantro, and green onions.

    Pour the dressing over the salad and toss everything together until well coated.

    Top the salad with the crumbled cotija cheese, roasted pepitas, and crunchy tortilla strips right before serving.

Store any leftover dressing in the fridge for up to three days. If you plan to save some salad for later, keep the tortilla strips separate until the very last second so they stay nice and crunchy.
