Salmorejo is a classic Spanish soup that comes from Cordoba. It is much thicker than a gazpacho because it uses bread to create a wonderful, velvety texture that feels quite satisfying on a warm afternoon.

I love this recipe because it lets the flavor of fresh tomatoes shine through without much fuss. If you have extra tomatoes from your garden, this is the best way to use them up before they go soft.

Ingredients

  • 2 pounds ripe red tomatoes, chopped
  • 7 ounces crusty bread, torn into pieces
  • 1/2 cup extra virgin olive oil
  • 1 clove garlic, peeled
  • 1 teaspoon salt
  • 1 tablespoon sherry vinegar
  • 2 hard boiled eggs, chopped for garnish
  • 2 ounces serrano ham, diced for garnish

Instructions

    Place the chopped tomatoes and the garlic clove into a blender or food processor.

    Blend the tomatoes and garlic on high until they are completely smooth.

    Add the pieces of bread to the tomato mixture and let it sit for about 10 minutes so the bread soaks up the liquid.
