This Turkey Bacon Avocado Salad is one of my favorite go to meals when I want something light but filling. The combination of salty crispy bacon and smooth avocado makes every bite feel like a treat, and the turkey adds just enough protein to keep you full for the rest of the day.

You can easily customize this by adding your favorite veggies or swapping the dressing to whatever you have in the fridge. I personally love a little extra black pepper on the avocado slices to bring out the flavor.

Ingredients

  • 4 slices turkey bacon, cooked and chopped
  • 1 cooked turkey breast, shredded or sliced
  • 1 ripe avocado, sliced
  • 4 cups mixed salad greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • Salt and black pepper to taste

Instructions

    Place the mixed greens in a large salad bowl.

    Arrange the sliced turkey, crispy bacon, avocado, tomatoes, and red onion on top of the greens.

    In a small jar or bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.

    Drizzle the dressing over the salad just before you are ready to eat.

    Toss everything gently so the dressing coats the greens without mashing the avocado.

If you are meal prepping this for later, keep the avocado separate and slice it right before serving to keep it fresh. You can store leftovers in the fridge for a day, but the greens may wilt if they sit in the dressing too long.
