I love making this salad when I want something light that still feels like a full meal. It is packed with colorful veggies and plenty of herbs, making every bite taste like a fresh breeze. It is also a fantastic way to use up a rotisserie chicken from the store if you are in a hurry.

The dressing is the star here because it hits all those lovely sweet and salty notes. If you want a bit of a kick, leave the seeds in your chili, or take them out if you prefer things on the milder side. This dish is naturally high in protein and fiber, so it keeps you feeling full and happy all afternoon.

Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups shredded cabbage
  • 1 large carrot, julienned
  • 1 cucumber, thinly sliced into matchsticks
  • 1/4 cup red onion, very thinly sliced
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup fresh mint, torn
  • 3 tablespoons fresh lime juice
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 1 clove garlic, minced
  • 1 small red chili, finely chopped
  • 1/4 cup roasted peanuts, crushed for garnish

    Start by making the dressing in a small bowl or a jar. Whisk together the lime juice, fish sauce, sugar, minced garlic, and chopped chili until the sugar has completely dissolved.
