When grocery prices climb, it is time to get creative in the kitchen. This simple stew is designed to bypass expensive imports by focusing on domestic staples like dry beans and chicken, which are much easier on your wallet right now.

I love this recipe because it is filling, healthy, and uses pantry staples that you can find at any local store. It is the perfect way to feed your family a nutritious meal without worrying about those extra costs at the checkout counter.

Ingredients

  • 1 pound dry pinto or black beans, soaked overnight
  • 1 pound chicken thighs, cut into bite sized pieces
  • 1 large onion, diced
  • 2 stalks celery, chopped
  • 2 carrots, sliced into coins
  • 4 cups low sodium chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. 1

Drain your soaked beans and rinse them well under cold water.

  2. 2

In a large pot or Dutch oven, heat the olive oil over medium heat and brown the chicken pieces until they are cooked through.

  3. 3

Add the onion, celery, and carrots to the pot and cook until they soften slightly.

  4. 4

Pour in the chicken broth and add the rinsed beans to the mixture.

  5. 5

Bring the liquid to a boil, then reduce the heat to low, cover the pot, and simmer for about 60 to 90 minutes until the beans are tender.

  6. 6

Season with oregano, salt, and pepper before serving warm in bowls.

๐Ÿ’ก Tips

You can store leftovers in an airtight container in the fridge for up to 3 days. This stew freezes beautifully, so feel free to make a double batch and keep some for a busy weeknight. Serve it with a side of homemade corn bread to round out the meal.
