Back to school season is always so busy, and finding time to get a good dinner on the table can feel like a challenge. This one pot taco pasta is a lifesaver because it cooks everything in a single pan, which makes cleanup a total breeze.

I love using ground beef and taco seasoning to give it a familiar flavor, but you can easily swap in ground turkey if you prefer something lighter. If you want a bit of extra nutrition, stir in a handful of fresh spinach right at the end until it wilts.

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 14 ounces dry rotini pasta
  • 2 cups beef broth
  • 1 can diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Fresh cilantro for garnish

Instructions

    Brown the ground beef in a large pot or deep skillet over medium heat until it is no longer pink.

    Drain the excess fat from the pan.

    Stir in the taco seasoning, dry pasta, beef broth, and the undrained can of tomatoes.

    Bring the mixture to a boil, then reduce the heat to low and cover the pan.
