Easy One Pot Taco Pasta
This creamy and cheesy taco pasta is a busy weeknight hero that the whole family will love.
dailyrecipesbook.comBack to school season is always so busy, and finding time to get a good dinner on the table can feel like a challenge. This one pot taco pasta is a lifesaver because it cooks everything in a single pan, which makes cleanup a total breeze.
I love using ground beef and taco seasoning to give it a familiar flavor, but you can easily swap in ground turkey if you prefer something lighter. If you want a bit of extra nutrition, stir in a handful of fresh spinach right at the end until it wilts.
Ingredients
- 1 pound ground beef
- 1 packet taco seasoning
- 14 ounces dry rotini pasta
- 2 cups beef broth
- 1 can diced tomatoes with green chilies
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- Fresh cilantro for garnish
Instructions
- 1
Brown the ground beef in a large pot or deep skillet over medium heat until it is no longer pink.
- 2
Drain the excess fat from the pan.
- 3
Stir in the taco seasoning, dry pasta, beef broth, and the undrained can of tomatoes.
- 4
Bring the mixture to a boil, then reduce the heat to low and cover the pan.
- 5
Let it simmer for about 12 to 15 minutes or until the pasta is tender and most of the liquid is absorbed.
- 6
Remove the pan from the heat and stir in the sour cream and shredded cheese until smooth and creamy.
- 7
Garnish with a little fresh cilantro before serving.
๐ก Tips
Store any leftovers in an airtight container in the fridge for up to three days. You can reheat it on the stove with a splash of water or broth to bring back that creamy texture. Serve it with a side of crunchy tortilla chips or a simple green salad.
