There is something so comforting about a classic oatmeal cream pie. These are perfect for when you need a dessert ready to go for a party or a busy week, since they actually taste better after sitting for a day.

My favorite trick for these is to make sure your butter is at room temperature before you start. This ensures the dough comes together perfectly and gives the cookies that signature soft texture we all love.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3 cups old fashioned rolled oats
  • 1 cup butter, softened (for filling)
  • 2 cups powdered sugar (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 1 tablespoon heavy cream (for filling)

Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and line two baking sheets with parchment paper.

  2. 2

In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.

  3. 3

Beat in the eggs and vanilla extract until well combined.

  4. 4

Stir in the flour, baking soda, salt, and cinnamon. Once combined, fold in the rolled oats.

  5. 5

Drop rounded tablespoons of dough onto your prepared baking sheets, leaving space for them to spread.

  6. 6

Bake for 10 to 12 minutes until the edges are lightly golden. Let them cool completely on the pan.

  7. 7

To make the filling, beat the softened butter until creamy, then slowly add the powdered sugar, vanilla, and heavy cream.

  8. 8

Spread a generous amount of filling onto the bottom of one cookie and top with another to make a sandwich. Repeat with the remaining cookies.

๐Ÿ’ก Tips

Store these in an airtight container in the refrigerator to keep the filling firm. They stay fresh for up to five days, and they are even softer on the second day.
