Creamy Homemade Tapioca Pudding
A cozy, comforting bowl of classic pudding filled with lovely chewy tapioca pearls.
Tapioca pudding is such a nostalgic treat that feels like a warm hug in a bowl. It has a unique texture that sets it apart from standard creamy puddings because those tiny pearls provide a wonderful little chew in every single spoonful.
I love how simple the ingredient list is for this dessert. Just remember to soak your pearls ahead of time if your package instructions suggest it, as it really helps them cook up perfectly soft and tender.
Ingredients
- 1/2 cup small pearl tapioca
- 3 cups whole milk
- 1/3 cup granulated sugar
- 1/4 teaspoon salt
- 2 large eggs, lightly beaten
- 1 teaspoon vanilla extract
Instructions
- 1
Place the tapioca pearls and milk in a medium saucepan and let them sit for about 30 minutes to soften.
- 2
Turn the heat to medium and bring the mixture to a gentle simmer while stirring constantly so it does not stick to the bottom.
- 3
Reduce the heat to low, cover the pan, and cook for about 15 minutes until the pearls are translucent and soft.
- 4
In a small bowl, whisk together the sugar, salt, and eggs.
- 5
Slowly pour about half a cup of the hot tapioca mixture into the eggs while whisking constantly to keep the eggs from scrambling.
- 6
Pour the egg mixture back into the main saucepan and cook over low heat for another 2 to 3 minutes until the pudding thickens.
- 7
Remove from the heat and stir in the vanilla extract.
- 8
Serve warm or let it cool completely before storing it in the fridge.
๐ก Tips
Serve this pudding warm with a dollop of whipped cream or a sprinkle of cinnamon. If you have leftovers, store them in an airtight container in the fridge for up to three days. It may thicken up more as it chills, so you can stir in a splash of milk before serving to loosen it back up.
