If you are looking for a simple way to get more greens on the dinner table, these cabbage steaks are a lifesaver. Slicing the cabbage into thick rounds allows them to caramelize beautifully in the oven, giving you a tender center and crispy, flavorful edges that taste amazing.

People love this recipe because it is incredibly hands off and works well with almost any protein. Just make sure to slice your cabbage thick enough so the leaves hold together while they roast.

Ingredients

  • 1 head of green cabbage
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup grated parmesan cheese
  • Optional: Red pepper flakes for a little heat

Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit and line a large baking sheet with parchment paper.

  2. 2

Remove any wilted outer leaves from the cabbage, then slice the head into one inch thick rounds.

  3. 3

Place the cabbage steaks onto the baking sheet in a single layer.

  4. 4

Brush both sides of each cabbage slice with olive oil.

  5. 5

Sprinkle the salt, pepper, and garlic powder evenly over both sides of the steaks.

  6. 6

Roast for 25 to 30 minutes, flipping them halfway through, until the edges are golden brown and crispy.

  7. 7

If using parmesan, sprinkle it over the steaks during the last five minutes of baking.

๐Ÿ’ก Tips

These taste best right out of the oven when the edges are perfectly crispy. If you have leftovers, store them in an airtight container in the fridge for up to three days and reheat them in the oven to bring back the crunch.
