These spinach tortillas turn out perfectly soft and chewy every time, plus the natural green color makes every meal feel a little more special. Ingredients

  • 2 cups fresh spinach
  • 2 cups all purpose flour
  • 3 tablespoons unsalted butter, softened
  • 1 teaspoon kosher salt
  • 1/2 to 3/4 cup hot water

    Place the spinach in a heatproof bowl and pour boiling water over it to cover. Let it sit for 2 minutes until wilted, then drain well and squeeze out every drop of excess moisture.

    In a food processor, pulse the flour, salt, and butter until the mixture looks like coarse crumbs. Add the drained spinach and process again until well combined.

    With the processor running, slowly stream in the hot water until the dough just starts to come together in a ball.

    Transfer the dough to a clean surface and knead it for a minute. Place it under an inverted bowl to rest for 20 minutes.

    Divide the dough into 10 equal pieces and roll each one into a thin 8 inch circle.

    Heat a dry skillet over medium heat. Cook each tortilla for about 30 seconds on the first side and 15 to 30 seconds on the second side until light brown spots appear.

Store your finished tortillas in a sealed bag with a paper towel tucked inside to keep them fresh in the fridge for up to one week. If you want to save them for later, wrap them tightly in aluminum foil and freeze for up to three months.
