Apricot chicken is one of my favorite meals when I need something effortless but delicious. You only need four ingredients to pull this together, and the slow cooker does all the hard work for you while you go about your day.

The end result is tender, juicy chicken coated in a sticky glaze that tastes amazing served over white rice. If you want to add a little extra color, try garnishing your plate with some chopped green onions or toasted sesame seeds right before serving.

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 bottle apricot preserves
  • 1 packet dry onion soup mix
  • 1/2 cup Catalina or French salad dressing

Instructions

    Place the chicken breasts into the base of your slow cooker.

    In a small bowl, whisk together the apricot preserves, dry onion soup mix, and salad dressing until smooth.

    Pour the sauce mixture over the chicken, making sure each piece is well coated.

    Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.

    Once the chicken is tender and cooked through, remove it from the pot and shred or slice it before serving with the extra sauce.

Store any leftovers in an airtight container in the fridge for up to 3 days. To reheat, just add a splash of water to the container so the sauce does not dry out in the microwave.
