Classic Easy Vegetable Stir Fry
A colorful and quick stir fry that brings fresh vegetables and a savory sauce together in minutes.
This stir fry is a go to recipe in my kitchen whenever I want something healthy and fast. It is perfect for those busy weeknights when you want to use up whatever fresh produce is sitting in your refrigerator.
I love how versatile this dish is because you can swap out the vegetables based on what you have on hand. My best tip is to get your sauce mixed and your vegetables chopped before you turn on the stove, because the cooking happens very quickly.
Ingredients
- 2 tablespoons vegetable oil
- 1 head broccoli, cut into florets
- 2 medium carrots, sliced thin
- 1 red bell pepper, sliced
- 8 ounces snap peas
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons soy sauce
- 1 tablespoon honey
- 1 teaspoon sesame oil

Whisk the soy sauce, honey, and sesame oil together in a small bowl and set it aside.

Add the broccoli and carrots to the pan and stir fry for about four minutes until they begin to soften.

Add the bell pepper and snap peas, cooking for another three minutes.

Pour the sauce over the vegetables and toss everything together for one or two minutes until the sauce coats the vegetables nicely.

Serve this over warm jasmine rice or rice noodles for a complete meal. If you have leftovers, store them in an airtight container in the fridge for up to two days. You can easily add cooked chicken or tofu if you want some extra protein.
