When I am short on time but craving something comforting, this skillet meal is my go to choice. It brings together lean ground turkey, tender sweet potatoes, and vibrant kale in one pan, which means minimal cleanup and maximum flavor for a busy evening.

The secret to success here is dicing your sweet potatoes into small, uniform cubes so they cook perfectly alongside the orzo pasta. The starch from the pasta creates a lovely sauce that holds everything together with a touch of Parmesan, making it a satisfying dish the whole family will enjoy.

Ingredients

  • 2 tablespoons cooking oil, divided
  • 1 pound ground turkey
  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • 1 medium sweet potato, peeled and cut into 1/2 inch cubes
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon rubbed sage
  • 1/2 teaspoon poultry seasoning
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt, divided
  • 1/4 teaspoon black pepper, divided
  • 1 cup uncooked orzo pasta
  • 3 cups chicken broth
  • 2 cups chopped kale
  • 1/2 cup grated Parmesan cheese

Instructions

    Heat one tablespoon of oil in a large deep skillet over medium high heat. Add the ground turkey and cook until browned, then remove the turkey from the pan and set it aside.
