Cheesy French Alpine Potato Bake

It is the perfect meal for a cold night when you want something hearty and simple. If you cannot find the traditional Reblochon cheese, a soft Taleggio or any washed rind cheese from your local deli works beautifully to give you that same creamy, savory finish.
Ingredients
- 2.5 lbs starchy potatoes, peeled and cut into cubes
- 1/2 lb thick cut bacon, sliced into small strips
- 1 large onion, thinly sliced
- 1 garlic clove, minced
- 1/2 cup dry white wine
- 1 lb Reblochon cheese or Taleggio, cut in half horizontally
- Salt and black pepper to taste
- 1 tablespoon butter for the dish

Place the potato cubes in a large pot of salted water and bring them to a boil. Cook for about 5 to 8 minutes until they are just tender but still firm, then drain them and set aside.

While the potatoes are boiling, preheat your oven to 400 degrees Fahrenheit and grease a baking dish with a little butter.

In a large skillet, fry the bacon strips over medium heat until they start to turn crisp. Add the sliced onions to the pan and cook them in the bacon fat until they are soft and lightly golden.

Stir in the minced garlic and cook for one minute, then pour in the white wine. Let the wine simmer for a few minutes until it has mostly evaporated.

Transfer the mixture to your prepared baking dish. Place the cheese halves on top of the potatoes with the rind facing up so the cheese can melt down into the cracks.
