Easy BBQ Pineapple Chicken Kabobs
These sweet and smoky kabobs are the perfect quick meal for a warm summer evening.

I love how the sweetness of the pineapple caramelizes over the flame and pairs perfectly with a tangy barbecue sauce. For the best flavor, try to let the chicken sit in the marinade for at least an hour before you thread them onto your skewers.
Ingredients
- 1 pound boneless skinless chicken breasts cut into 1 inch pieces
- 1 cup fresh pineapple chunks
- 1/2 cup your favorite barbecue sauce
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 clove garlic minced
- 1/2 teaspoon smoked paprika

In a medium bowl, whisk together the olive oil, soy sauce, minced garlic, and smoked paprika to create your marinade.

Add the chicken pieces to the bowl and toss them until they are well coated.

Cover and refrigerate the chicken for at least one hour so the flavors can really soak in.

If you are using wooden skewers, soak them in water for 20 minutes before grilling to prevent them from burning.

Preheat your grill to medium heat and lightly oil the grates.

Thread the chicken pieces and pineapple chunks onto the skewers, alternating between them.
