Simple Roasted Garlic Parmesan Zucchini
This roasted zucchini side dish is tender, savory, and goes perfectly with any weeknight dinner.

My top tip for the best texture is to make sure you do not overcrowd your baking sheet. If the pieces are spread out with plenty of room, they will roast nicely rather than steaming in their own juices.
Ingredients
- 2 medium zucchinis, sliced into half moons
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/4 cup grated parmesan cheese
- Salt and black pepper to taste
- 1 tablespoon chopped fresh parsley
Instructions

Preheat your oven to 400 degrees Fahrenheit.

Place the sliced zucchini on a large rimmed baking sheet.

Drizzle the olive oil over the zucchini and sprinkle with the garlic powder, salt, and pepper.

Store any leftovers in an airtight container in the fridge for up to three days. You can reheat them in a toaster oven to bring back some of the crispiness. These also taste great tossed cold into a lunch salad.
