There is nothing quite like the smell of apples and cinnamon in the kitchen to start your day off right. These pancakes are a favorite in my house because they come together in minutes and feel like a special treat even on busy weekday mornings.

Since the oats and applesauce do all the heavy lifting in the blender, you get a lovely texture without any fuss. Feel free to top yours with a little extra cinnamon or a drizzle of maple syrup for the perfect bite.

Ingredients

  • 2 cups rolled oats
  • 1 cup unsweetened applesauce
  • 1 cup milk of your choice
  • 2 large eggs
  • 1 tablespoon maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • A pinch of salt
  • Butter or oil for the pan

Instructions

  1. 1

Place all the ingredients into your blender starting with the liquid items to help it blend better.

  2. 2

Blend on high until the mixture is completely smooth and the oats have broken down into a batter.

  3. 3

Let the batter sit for five minutes so it thickens up slightly while you heat a skillet over medium heat.

  4. 4

Lightly grease your pan with a little butter or oil.

  5. 5

Pour about one quarter cup of batter onto the hot skillet for each pancake.

  6. 6

Cook until bubbles form on the surface, then flip and cook for another minute or two until golden brown.

  7. 7

Serve warm with your favorite toppings like fresh apple slices or more maple syrup.

๐Ÿ’ก Tips

Store any leftover pancakes in an airtight container in the fridge for up to three days. They reheat beautifully in the toaster or a warm pan. You can also freeze them between sheets of parchment paper for a quick grab and go breakfast later in the week.
