There is nothing quite like a stack of warm lemon blueberry pancakes to make your weekend morning feel special. These cakes are tender, airy, and packed with fresh flavor. I started making this recipe after a fun day of picking berries in Michigan, and they have been a family favorite ever since.

Using Greek yogurt in the batter is my secret for keeping them extra creamy and tangy without needing buttermilk. My best advice for the perfect pancake is to keep your heat steady on medium low so they cook through perfectly without burning on the outside.

Ingredients

  • 1 1/2 cups all purpose flour
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup Greek yogurt
  • 1 large egg
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 2 tablespoons neutral oil or olive oil
  • 1 cup blueberries, fresh or frozen
