There is nothing quite like starting your day with a warm breakfast burrito. I love these because they are filling, comforting, and come together easily even when you are still waking up.

My biggest tip for success is to cook your potatoes until they are nice and golden brown before adding the eggs to the pan. This gives the burritos a wonderful texture that makes them taste just like they came from your favorite local cafe.

Ingredients

  • 8 large flour tortillas
  • 8 large eggs
  • 2 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 1 bell pepper, diced
  • 1/2 onion, diced
  • 2 tablespoons vegetable oil
  • Salt and black pepper to taste
  • Salsa or hot sauce for serving

Instructions

    Heat the oil in a large skillet over medium heat and add the diced potatoes.

    Cook the potatoes for about 10 minutes until they are soft inside and crispy on the outside.
