There is something so comforting about a warm casserole waiting on the dinner table after a long day. This meal is a favorite because it uses simple pantry staples like frozen vegetables and tater tots to create a filling dinner that everyone enjoys.

My best tip for success is to make sure you brown your ground beef really well before adding the other ingredients. A little bit of extra color on the meat adds a wonderful depth of flavor to the entire casserole.

Ingredients

  • 1 pound lean ground beef
  • 1 medium yellow onion, diced
  • 10 ounces frozen mixed vegetables
  • 1 can condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 cups shredded cheddar cheese
  • 1 pound frozen tater tots

Instructions

  1. 1

Preheat your oven to 375 degrees Fahrenheit.

  2. 2

In a large skillet over medium heat, cook the ground beef and diced onion until the meat is browned and the onion is soft.

  3. 3

Drain any excess fat from the skillet.

  4. 4

Stir in the frozen vegetables, cream of mushroom soup, milk, garlic powder, salt, and pepper until well combined.

  5. 5

Pour the beef mixture into a 9 by 13 inch baking dish and spread it out evenly.

  6. 6

Sprinkle the shredded cheddar cheese over the top of the beef mixture.

  7. 7

Arrange the frozen tater tots in a single layer across the top of the cheese.

  8. 8

Bake for 30 to 35 minutes or until the tots are golden brown and the casserole is bubbly.

๐Ÿ’ก Tips

Serve this dish immediately while the tots are nice and crispy. If you have leftovers, keep them in an airtight container in the fridge for up to three days and reheat in the oven to maintain the best texture.
