Easy Creamy Rotisserie Chicken Salad
A quick and delicious way to turn leftover rotisserie chicken into a fresh, satisfying meal.
dailyrecipesbook.comRotisserie chicken is my absolute favorite shortcut for busy days. It is already cooked to perfection and packed with flavor, which means you can have a fresh meal on the table in just fifteen minutes. This classic chicken salad is one of my go to recipes when I want something comforting but do not want to turn on the stove.
To make it extra special, I love using a mix of mayonnaise and sour cream for the base. It keeps the dressing light and tangy without losing that classic creaminess. If you have some celery and red onion in your crisper drawer, they add the perfect crunch to every single bite.
Ingredients
- 3 cups shredded rotisserie chicken, skin and bones discarded
- 1/2 cup mayonnaise
- 1/4 cup sour cream or plain Greek yogurt
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon garlic powder
- 1 stalk celery, finely diced
- 1/4 cup red onion, finely diced
- 1 tablespoon fresh dill, chopped
- Salt and freshly cracked black pepper to taste
Instructions
- 1
Shred the rotisserie chicken into bite sized pieces and place them in a large mixing bowl.
- 2
In a separate small bowl, whisk together the mayonnaise, sour cream, lemon juice, garlic powder, salt, and black pepper until smooth.
- 3
Pour the dressing over the shredded chicken.
- 4
Add the finely diced celery, red onion, and fresh dill to the bowl.
- 5
Gently stir everything together until the chicken and vegetables are evenly coated with the dressing.
- 6
Taste the salad and add a little more salt, pepper, or lemon juice if needed.
- 7
Serve immediately or cover and chill in the refrigerator for an hour to let the flavors blend together.
๐ก Tips
You can store this chicken salad in an airtight container in the refrigerator for up to three days. It tastes even better the next day after the flavors have had time to meld together. Try serving it on toasted sourdough bread, wrapped in a warm tortilla, or scooped over a bed of fresh salad greens.
