Easy Green Chile Egg Casserole
A high protein egg bake packed with green chiles that is perfect for busy mornings or hosting guests.
dailyrecipesbook.comThis egg casserole is a staple in my house when I need a breakfast that feels special but does not take much effort. By swapping regular shredded cheese for cottage cheese, you get a lovely creamy texture and a nice boost of protein to keep you full all morning long.
It is incredibly simple to put together, as you just whisk everything in one bowl and let the oven handle the rest. I love making this on a Sunday night because the leftovers reheat perfectly for quick breakfasts throughout the busy work week.
Ingredients
- 6 large eggs
- 1 cup cottage cheese
- 1/2 cup all purpose flour
- 1 teaspoon baking powder
- 4 ounces diced green chiles, drained
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray or butter for the pan
Instructions
- 1
Preheat your oven to 375 degrees Fahrenheit and grease a small square baking dish with cooking spray or butter.
- 2
In a large mixing bowl, whisk together the eggs, cottage cheese, flour, baking powder, salt, and pepper until the mixture is mostly smooth.
- 3
Gently fold in the drained green chiles.
- 4
Pour the egg mixture into your prepared baking dish.
- 5
Bake for 30 to 35 minutes until the center is set and the top turns a light golden brown.
- 6
Let the casserole rest for about 5 minutes before slicing and serving warm.
๐ก Tips
Store any leftovers in an airtight container in the fridge for up to three days. You can easily reheat individual slices in the microwave for about one minute. Try serving this with a spoonful of fresh salsa or a dollop of sour cream on top.
