There is nothing better than the smell of fresh muffins baking on a Sunday morning. These peanut butter banana muffins are a staple in my house because they are naturally sweetened with maple syrup and rely on wholesome ingredients to keep everyone energized throughout the day.

I love that these are both dairy free and gluten free without sacrificing any texture. My favorite way to dress them up is to fold in a handful of mini chocolate chips before baking, but they are just as delicious plain with a little extra peanut butter spread on top.

Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup creamy peanut butter
  • 1/3 cup pure maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 cup gluten free oat flour
  • 1/4 cup almond flour
  • 1/4 cup mini chocolate chips (optional)

Instructions

    Preheat your oven to 350 degrees Fahrenheit and line a muffin tin with paper liners.

    In a large bowl, whisk together the mashed bananas, peanut butter, maple syrup, eggs, and vanilla extract until smooth.

    Add the baking soda, baking powder, oat flour, and almond flour to the wet ingredients. Stir until the batter is just combined.

    Fold in the mini chocolate chips if you are using them.

    Divide the batter evenly into the prepared muffin tin, filling each cup about three quarters full.

    Bake for 18 to 22 minutes or until a toothpick inserted into the center comes out clean.

    Let the muffins cool in the tin for 10 minutes before moving them to a wire rack to finish cooling completely.
