Easy No Bake Root Beer Float Pie
A refreshing and nostalgic dessert that captures the classic soda fountain flavor in a creamy pie.
When the summer heat makes it too hot to turn on the oven, this no bake pie is my go to dessert. It tastes just like a root beer float, but you can enjoy it with a fork. It is a total crowd pleaser for parties or simple family dinners.
You can keep this pie simple by using store bought ingredients, but try to use a high quality root beer extract for the best flavor. It sets up beautifully in the fridge and stays nice and cool for every bite.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 6 tablespoons unsalted butter, melted
- 1/4 cup sugar
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon root beer extract
- 8 ounces whipped topping, thawed
- 1/4 cup root beer soda
- Whipped cream for garnish
Instructions
- 1
Mix the graham cracker crumbs, melted butter, and sugar in a small bowl until it looks like wet sand.
- 2
Press the crumb mixture firmly into the bottom and up the sides of a 9 inch pie plate, then put it in the freezer while you make the filling.
- 3
Beat the cream cheese and powdered sugar in a large bowl until smooth and creamy.
- 4
Slowly stir in the root beer extract and the root beer soda.
- 5
Gently fold in the whipped topping until the mixture is uniform and fluffy.
- 6
Pour the filling into your prepared crust and spread it out evenly.
- 7
Chill the pie in the refrigerator for at least four hours, or until it is firm enough to slice.
- 8
Top with extra whipped cream before serving.
๐ก Tips
Store any leftovers in the refrigerator covered with plastic wrap for up to three days. For a fun presentation, add a drizzle of chocolate syrup over each slice before you serve it.
