There is something so comforting about a sticky teriyaki glaze paired with juicy chicken thighs. It is one of those meals that always makes everyone happy at the dinner table because the balance of sweet pineapple and salty soy sauce is just perfect.

I love making this for busy weeknights because you can either pop it in the oven or throw it on the grill. If you want that extra smoky flavor, the grill is the way to go, but baking is super convenient when you want a hands off dinner.

Ingredients

  • 1.5 pounds boneless skinless chicken thighs
  • 1/2 cup soy sauce
  • 1/2 cup pineapple juice
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon cornstarch mixed with 1 tablespoon water
  • Sliced green onions for garnish

Instructions

    Whisk the soy sauce, pineapple juice, brown sugar, rice vinegar, sesame oil, garlic, and ginger together in a small bowl.

    Place the chicken thighs in a shallow dish and pour half of the marinade over them, then let them sit for at least thirty minutes.

    Pour the remaining marinade into a small saucepan over medium heat, stir in the cornstarch mixture, and simmer until the sauce thickens into a glaze.

    If baking, preheat your oven to 400 degrees Fahrenheit and bake the chicken for 25 minutes, brushing with the glaze halfway through.

    If grilling, cook the chicken over medium high heat for about 6 minutes per side, brushing generously with the glaze during the final minutes of cooking.

    Serve the chicken hot over a bowl of fluffy white rice and drizzle any extra glaze over the top.

Store any leftovers in an airtight container in the fridge for up to three days. You can also serve this with steamed broccoli or snap peas to add some extra greens to your meal.
