Funeral Potato and Chicken Casserole
This hearty casserole turns a classic comfort dish into a complete dinner by adding tender shredded chicken.
dailyrecipesbook.comIf you are looking for a meal that feels like a warm hug, this is the one for you. I used to serve funeral potatoes just as a side dish, but once I started adding chicken, it became a complete dinner that my whole family asks for constantly. It is creamy, cheesy, and has that signature crunchy topping that everyone loves to dig into.
My best tip for this recipe is to use a rotisserie chicken if you are short on time. It makes the prep work incredibly fast, and the flavor is always perfect. This is also a fantastic way to use up any leftover chicken you might have in the fridge from another night.

- 30 ounces frozen shredded hash brown potatoes, partially thawed
- 3 cups cooked shredded chicken

- 1/2 teaspoon ground pepper
- 2 1/2 cups shredded sharp cheddar cheese

Bake for 45 minutes, or until the casserole is hot, bubbly, and the top is golden brown.
๐ก Tips
Store any leftovers in an airtight container in the refrigerator for up to 5 days. You can also freeze the cooked casserole for up to 3 months, just be sure to thaw it overnight in the fridge before reheating in the oven at 375 degrees Fahrenheit until warmed through.
