Ingredients
- 2 pounds boneless, skinless chicken thighs
- 3 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup fresh parsley, chopped
- 1/4 cup shelled pistachios, finely chopped
- 2 tablespoons red wine vinegar
- 1/4 cup extra virgin olive oil
- 1 clove garlic, minced

While the chicken marinates, stir the parsley, chopped pistachios, red wine vinegar, extra virgin olive oil, and the second clove of minced garlic together in a small bowl to make the chimichurri.
