My family absolutely loves these healthy zucchini muffins. They are naturally gluten free and sweetened with maple syrup, so you can feel good about grabbing one on a busy morning.

The trick to getting the perfect texture is to gently squeeze the grated zucchini to remove excess water before mixing it into the batter. Letting the batter rest for a few minutes before baking also makes a huge difference in how light and fluffy they turn out.

Ingredients

  • 2 cups gluten free rolled oats or oat flour
  • 1/2 pound fresh zucchini, grated
  • 1/2 cup maple syrup
  • 2 large eggs
  • 1/3 cup melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon salt
